Recipe from the Slow Food region of Carinthia:
POTATO ROULADEIngredients
Dough
– 1 kg potatoes of the Hermes variety
– 2 eggs
– 3 egg yolks
– 5 dag butter
– 10 dag cornflour
– salt, pepper and nutmeg
Savory filling
– Bacon, onion, mushrooms, parsley and chives
Sweet filling
– jam
PREPARATION
1. chop the bacon, onion, mushrooms, parsley and chives and fry in a pan.
2. press the cooked potatoes through a potato ricer and mix with flour, egg yolk, eggs, butter, cornflour, salt, pepper and nutmeg.
3 Place a sheet of cling film on the work surface.
4. roll out the potato dough to a thickness of approx. 1 cm and spread the filling evenly over it. Roll up like a roulade. Leave the cling film around the outside of the roulade and fold in the ends. Then wrap with aluminum foil and roll up the ends as well. 5.
5. place the roulade in boiling water and cook for approx. 20 minutes.
